Quick Update on the Restaurant Space
Wanted to check in and let you know what we’ve been up to.

The space we were renting at 3134 Rufina St. in Santa Fe went away in August, as the proprietor of the food business that we rented from, The Providers, passed away unexpectedly.  Two months later we were able to work out with the property owners for Uncle DT’s to take over the entire space.  We will be going ‘full steam ahead’ with the setup once we get the keys and gain real entry on November 1st!

We’ve been having fun getting all the decorating ideas together, as well as making the many (gulp) equipment purchases necessary to deck out the commercial kitchen. If we are lucky in the permitting process, we hope to be slinging *at least* take-out BBQ by December 15th. That being said, we know anything can happen so we are remaining flexible in our timeline. We ask you to do the same, please!

With the new kitchen comes an industrial exhaust hood that will allow us to expand the menu. Some things to look forward to: specials including our take on New Mexico’s ubiquitous Green Chile Cheeseburger, and the pride of Lockhart, Texas: Smoked Prime Rib. Also this winter, Uncle DT’s Famous Pulled Pork will be featured in a to-die-for Green Chile Stew!

Sales of our ‘simmer-in-bag’ take-home offerings will resume as well, available during business hours at the store.
