Updates from the Pit
Hello friends and guests, Uncle DT here,
I wanted to give a couple quick updates from the Smokehouse as we all navigate our way through these uncharted waters.
The first thing I want to mention, is that at Uncle DT’s, the only employee is me. The owner of the business. When the earliest announcements of COVID-19 (Corona Virus Disease 2019) started coming in, I immediately implemented these policies/practices:
•Upon entering the building each day, all door knobs, inside and out, as well as surfaces and common touch points, are disinfected with bleach-based products while wearing gloves. Then I wash my hands.
•Every item from every delivery I receive from my food distributor is sprayed with a bleach solution before being brought into the building.
•After every order that is taken, I immediately wash my hands, put on gloves, and then begin preparing the food
•Gloves are worn during the handling and preparation of all foods.
Our Boil-in-Bag Products
I also want to remind everyone of our boil-in-bag products. An article that came out Monday states,
“As with other known corona viruses, this virus is sensitive to cooking temperatures. Heat treatment at 145°F for 4 minutes (temperature used when preparing hot food in mass catering) can therefore reduce contamination of a food product by a factor of 10,000.”
The minimum cooking temperature I use is 250°F, and the minimum internal temperature of the finished foods I offer is 170°F (200°F+ for beef and pork). Just simmer your Uncle DT’s BBQ for the times listed in the Reheating Guide to achieve the recommended results.
Take-out and B.i.B. Pickups
All take-out and Boil-in-Bag pickups will be done at 3134 Rufina St. during our regular hours:
Tues-Sat, 11-2 and
Weds- Sat 5-8
I will take your credit card info over the phone, and your order will be waiting for you outside the restaurant door in a cooler whose common touch-points are sprayed with bleach solution before and after every pickup. You can also order and pay through DoorDash, a very convenient solution.
